How to make an easy Tomato Soup

This recipe will show you how to create a wonderful and creamy tomato soup. 

Ingredients

Tablespoon of vegetable oil 

400g tin chopped tomatoes 

1 vegetable stock cube

1 medium potato 

1 medium onion

1 medium carrot

Half teaspoon dried mixed herbs

Black pepper to season

Wooden Spoon

Medium sized pan

Method

1. Prepare the vegetables 

Peel and chop the onion, potato and carrot.

2. Put oil into medium sized pan and heat gently.

3. Fry veg in oil gently for 5 minutes. Stir with a wooden spoon.

4. Add stock cube to 400ml of boiling water and mix.

5. Add stock and tinned tomatoes to pan and stir.

6. Add mixed herbs.

7. Bring to the boil, turn down heat and simmer gently for approximately 15 minutes, with the lid on the pan until all vegetables become soft.

8. Take pan off heat, place on a pan stand, liquidise or blend soup until smooth.

9. To create a creamier and smoother texture you could add some light cream and blend.

10. Taste soup and season, add more liquid if necessary.

You've now created a delicious creamy soup which you may enjoy by yourself or with friends and family.
